tampopo is a chain of fast food restaurants selling Oriental dishes, and in this case "Oriental" includes dishes from Thailand, Vietnam, Malaysia and Singapore, Indonesia, Philippines, Japan and Korea. Obviously no eatery existing on the worldly plane could encompass all the savory cuisines engendered in such a geographically extensive and densely populated area, so tampopo must be selective in crafting its menus. The name of the business comes from the 1985 classic comedy film produced by acclaimed Japanese auteur Juzo Itami, also called Tampopo. Tampopo was a "noodle western," a parody of the American film genre characterized by the cowboy which had already been unintentionally parodied by the "spaghetti westerns" produced in Italy. In this noodle western, then, a modern day cowboy who drives a truck rides into town to help struggling noodle chef Tampopo set up the perfect noodle shop. And that's an excellent way to express what the tampopo restaurants sell, because all the cuisines referenced in its dishes are based on noodles (and, of course, the ever-present grain rice). In general, what tampopo cooks can be classified as soup noodles (large, substantial, filling), rice or noodles fried in a wok, or sauce-centered dishes like curries and stews. There is one problem with the tampopo website: one must download the menus as portable document files, and there is simply no excuse for inconveniencing a customer that way. You have page space at your disposal, tampopo, so please use it! We'd love to be able to see your delicious dishes without delay.
But once tampopo's menu is downloaded and opened, it reveals a wealth of treasures from East Asia, many of which require translation. Very few of us will know offhand that the Tod Man Khao Pod, from Thailand, is simply corn fritters with a chili and peanut dipping sauce, or that Goi Cuon, from Vietnam, is a type of spring roll (vegetables, glass noodles and exotic herbs wrapped in rice paper), or that a dish of Bulgogi, (from bul gogi, cow meat) from Korea, is only beef served with the spicy pickled cabbage known as kimchi. But under no circumstances should tampopo's bul gogi be confused with the other well-known Korean entree kai gogi, or "dog meat."
