The Steps Bistro (Stepsbistro.co.uk)
stepsbistro looks very peculiar in the photographs that appear on the home page belonging to its site. It seems to be a hole in the wall type of nook with almost cafeteria style seating, lit most unaccountably by black light (as one infers from the uncanny fluorescence of the white menus and napkins). Now black light is never used by restaurants, of course, since it makes the diners look spectral and the food incredibly unappetizing. But the stepsbistro curriculum vitae, which really belongs to its owner (one "chef Rob Gill") doesn't entirely accord with that visual impression, because Gill has experience in the catering services offered at the Royal Guernsey and Mullion Golf Clubs, both dating back to the 1890s and very well respected. These are not primarily dining establishments, of course, but the members do bring their families on Sundays and holidays expecting a reasonably good meal. The American equivalent to this type of food service would be the country club, where food intended for casual dining underpins the sport and social activities, and can rise to a festive level for special occasions. If you look at stepsbistro's menu, that is exactly the food provided. For your eight-pound lunch, stepsbistro will serve you any one of a range of homely favorites like Scampi, Chips & Peas, or Cheddar Cheese Ploughman's, or Liver & Bacon with Croquette Potatoes & Peas. There's not an intimidating or mysterious choice in the lot, and to imagine these dishes served on cafeteria tables is no stretch at all.
stepsbistro's Main Menu is where one finds the touches learned from the "German, Swiss and Austrian chefs" Chef Rob tells us he studied under, little exoticisms like saffron cream sauce for the "Thai spiced Salmon and Brixham Crab Cakes," the "Deep-fried Somerset Camembert with Spiced Cranberry Dip" (which would have been the centerpiece of a Christmas cheese table at one of the golf clubs, you may depend upon it), or even "Oriental Duck Salad with Plums," which sounds like stepsbistro's updated twist on the classic roast goose stuffed with prunes. Any small and unprepossessing establishment tucked in an unobtrusive corner of Torquay that can propose stepsbistro's selection of culinary audacities, however mild, is worth a try.
