Homebrewers make beer from scratch in their own kitchen. Beer is made by employing a series of steps that revolve around a one-hour boiling process. The flavors and colors of the beer are determined by the ingredients used. There are only four ingredients in most beer. They are, malt, hops, yeast and water. Each ingredient lends an important contribution to the beer. The water is an important component because it comprises such a large portion of the total volume. Different water produces very different results. English beers are brewed with very hard water that contains a lot of minerals. Burton on Trent style water offers unique characteristics to beer. German lagers are brewed with soft water that is light on its mineral composition. German brewers brought lager to the United States when they settled at the banks of Lake Michigan. The vast body of water provided an endless supply of soft water that was tailor made for their light bodied lagers.
Hops are a bittering component in beer. There are hundreds of hop varieties, but they are all originally cultivated from a selection of hops called ‘noble hops’. By crossing and altering the hop strains over time, different characteristics have been bred into the modern varieties. The broad character of hops can be classified into three main profiles. Spicy hops are the closest ancestors of noble hops. They contribute spicy overtones to the beer, and are usually added at several times throughout the boil. German beer is characteristically laden with spicy hop varieties. Citrus hops are an American phenomenon, and they have played a significant role in the microbrew revolution across the world. Citrus hop varieties are characterized by a grapefruit resin flavor profile that is distinctly western United States. Many of the world’s hops are grown in that region, so the proliferation of hoppy ales is an extension of the region. Malt is the component of beer that provides the fermentable sugars for the yeast to feed on. Barley is germinated to a point before being lightly roasted. The malting process creates enzymes that will later aid in the starch conversion of the grain mash. By holding the sprouted grains in hot water for a prescribed amount of time, a brewer is converting the starches to sugar.
